So for starters, I should say that by now I'm quite familiar with how to adjust the linkage and I am able to shift into and retain all of the other gears, including reverse.

So I *would* normally expect this to be worn dog teeth or the slider.

What's weird is that it shifted into and stayed in first no problem before. But during the Chumpcar race we had to pull the transmission and replace the clutch. We put it all back together and then it would pop out of first. I'm then wondering what could have broken during that time that would all of a sudden not allow the dog teeth to fully engage, or what other issue could be going on?

I'm not opposed to taking off the tailcone. Just want some opinions on what it could be before I do. Thanks guys!

The stock 914 shift linkage can bend. You can tell if its harder to install.

You can also test 1st by adjusting the shifter to get 1st squarely and then see if the transmission really is popping off vs the shifter.
