I finally figured out what I was doing wrong trying to melt the dark chocolate I had (20 lbs. of Lyndt ) and took some advise from a buddy at work and started with a different type of chocolate. I'm still working to get them exactly right, but here they are:
Each one weighs in at about 50g a reg chocolate bar is about 40-45g. Ingredients: sugar, nonfat milk, blend of vegetable oils (contains plams oils), cornstarch, artificial flavouring, salt, and soya lecithine. Manufactured in a facility that processes peanuts. The problem with the dark chocolate was I was using Lindt (Swiss) chocolate and I found out that it is finished chocolate. I was told that in their process they do something to it or add something that makes it very hard to remelt. So when I get a source for the dark chocolate (read at the right price) I will offer them in chocolate, chocolate. (IMG:style_emoticons/default/biggrin.gif)
